New Year's Eve with Chef Juan Arbelaez

The young chef reveals his friendly and atypical new year's meal!

The young Colombian chef, who is not 30 years old yet, Juan Arbelaez, delivers the secrets of a New Year's Eve meal mixing the savours of South America and the Mediterranean. After appearing on the French culinary show, Top Chef, Juan opened his first restaurant Plantxa in 2013 then continued his career by launching three other establishments: A Mere, Levain and Limon. In the kitchen at Yaya, a Greek restaurant opened five months ago, he reveals his recipe for a delicious and atypical New Year's Eve!

A native of Bogota now living in France, Juan Arbelaez invites you on a surprising trip through the tastes from the four corners of the world. On the menu, a tasting meal with family or friends in the style of an hors d'oeuvre party. Juan Arbelaez offers you this moment for sharing and conviviality with a succession of small plates that are as colourful as they are appetising. Your evening will start with two typically Greek verrines, a tzatziki of yogurt with plenty of lemon and a delicious tarama to spread on his homemade bread. You'll also dig into some eggplant caviar with well roasted skin. Then be tempted by the bean salad with baby spinach, sorrel and herbs. For a little bit of sunshine, there will be some grilled octopus on a beetroot coulis. The chef will cut up some red onion, then add a bit of dill, cilantro and mint. Add a dash of oregano and some hot pepper to perfume the recipe, then prepare to taste your end-of-the-year dinner while dancing the sirtaki! As you can see, the Chef's motto, set out in his menu, are the sharing and the celebration that are found on the plates as in the atmosphere of this exceptional evening!
Happy holidays of the end of the year!
